Roasted Cauliflower with Green Tahini, Almonds, and Golden Raisins

Golden roasted cauliflower meets bright tahini, toasted almonds, and sweet raisins for a simple but impressive side.
Ingredients
1 head of cauliflower, stem trimmed
3 tbsp olive oil
1 tbsp za’atar seasoning (optional)
Salt and pepper to taste
S3 Green Tahini Dressing and S3 Crunchy Topper
Optional: ¼ cup toasted pine nuts
Optional: 2 tbsp golden raisins
Instructions
Preheat the oven to 400°F.
Toss the cauliflower with olive oil, salt, pepper, and za’atar if using.
Place in a baking dish, cover with foil, and roast for 30 minutes.
Remove the foil and continue roasting for another 40–45 minutes, until golden and tender.
Let the cauliflower rest for 5 minutes, then drizzle with S3 Green Tahini Dressing.
Sprinkle with Crunchy Topper, and add toasted almonds and golden raisins if desired.
Serve whole for a show-stopping presentation or cut into florets for a simple side.
